Why It Stays Fresh

The reason our sashimi stays fresh is just one thing

It’s not because of any special cold-storage tech or secret recipe.

So many guests come (and returning guests keep coming back) that ingredients are used up on the same day. Our shop rarely has stock that carries over to the next day.

Every morning we stand in front of the tanks and refill new stock into the spots emptied by yesterday’s guests. High turnover simply means many guests, and many guests means ingredients have no room to sit and wait.

That’s why we always say to guests: "Our sashimi being fresh isn’t thanks to us: it’s thanks to those who keep coming back." With gratitude, we only prepare that day’s stock.

Why So Many Good Places

Why are there so many good places in Gijang?

This area (famous for the search term Gijang matjip) sits at the eastern edge of Busan. It is a meeting point of cold and warm currents that concentrates food sources. Where the two currents meet, mineral-rich plankton blooms explosively, drawing in an abundance of fish and edible sea life. National Institute of Fisheries Science coastal observations for Busan also describe the sea off Gijang as a corridor where migratory species pass through with each season, thanks to a relatively narrow year-round temperature range.

The Gijang matjip restaurants clustered in this village are known for meticulous ingredient selection. Each morning shops check tank conditions and place only that day’s best on the guest table. This practice runs on fishing-community rules (mesh size, spawning-season bans, undersized-catch release) with the local fishing collective imposing internal penalties when broken. It’s that strict.

On top of that, a coastal-village food culture has been handed down for generations. Haenyeo grandmothers still go out to dive, and fishermen still haul in nets before dawn. These traditions are the backdrop that made a dense cluster of Gijang matjip restaurants possible. Yeonhwa-ri, in particular, is one of the last villages in Gijang-gun, Busan, with an active haenyeo community, so some of what appears on your table today may have been brought up from that morning’s dive.

Ultimately, the very category of Gijang matjip exists because of a triple combination: geography (converging currents), rules (fishing-community norms) and culture (haenyeo diving). Remove any one and today’s density becomes impossible. Come with this context in mind, and the same plate will feel deeper.

What makes Yeonhwa-ri special?

Among the Gijang matjip zones in this region, this village retains the strongest diving culture. Through a long-standing relationship with the local fishing collective, ingredients in good condition on the day are prioritised for the guest table. Every morning the haenyeo grandmother checks each ingredient before setting up the meal.

Tank management is also different. We swap the seawater frequently, and the haenyeo grandmother personally verifies temperature and salinity by hand. Rather than relying only on equipment, she reads condition through her senses: long-refined know-how. Water changes happen at least twice a day, up to 3–4 times during summer peak. If the water turns cloudy, live fish stress and flesh softens; she catches those early signs with her fingertips.

A large sign faces the main road, so finding us is easy. Being right in front of the village also makes access smooth. It’s a clean space that puts the greatest care into ingredient condition and freshness. A 250-space free parking lot sits right at the front, so self-drive guests won’t stress, and the 2F window seats open onto the sea in front of the village.

The name Yeonhwa-ri comes from the Lotus Flower Village (蓮花里). It appears on Joseon-era maps and remains an old place name. An ancient shrine tree and a haenyeo memorial still stand at the village entrance. Take a short look at how people here have lived alongside the sea long before this became a tourist stop, and the dish on your table will feel a little different.

Every morning I stand in front of the tanks and check the condition. When I can put the best ingredient of the day on a guest table, that reward is what carries me through the day.

    On days when tides allow, the haenyeo grandmother dives early. Live fish and shellfish auctioned that morning arrive from nearby fishing collectives and enter the tanks. The shop is empty of guests at this hour.

  2. Water change · condition check

    The haenyeo grandmother checks tank temperature, salinity and fish condition one by one. Ingredients not in good condition are filtered out and never plated. This is the hour we put the most care into ingredients.

  3. Open · quiet morning guests

    Doors open. Regulars come by for a bowl of abalone porridge as breakfast or brunch. The best window to grab a window seat easily. A great pre-tour visit.

  4. Lunch peak · 20–40 min wait

    Weekends and holidays are busiest this hour. Waits of 20–40 min. Weekdays around 12 also fill up. If you want to come at this time, call ahead (0507-1482-2427) to check wait status. Lunch-move flows from Osiria and Haedong Yonggungsa peak here.

  5. Afternoon calm · best for photos

    After the lunch peak the shop quiets. The 2F ocean-view window seats open up, and natural light is softest; ideal for plate photos. Also when YouTubers and bloggers often visit.

  6. Between visits · quiet course

    Late-lunch-into-early-dinner visits. Coming from Ananti Cove or Lotte World Busan often lands here. Almost no wait.

  7. Dinner · ocean-view sunset

    Weekend evenings are the most popular. Ocean-view window seats fill by arrival order: expect a wait at this hour. For window certainty, morning or weekday visits are recommended. Summer season means enjoying the sunset with your spread.

  8. Last order · closing

    Last orders accepted at 20:00. For 20 minutes after, guests already served finish comfortably. No new entries after 20:20. Please double-check the time when planning a late visit.

Mondays and Tuesdays can have wider swings in ingredient condition. If you target specific items like sea cucumber or conch, visiting Wednesday–Sunday tends to have more stable condition.

Our haenyeo grandmother has lived with the sea in front of Yeonhwa-ri since she was nineteen. Over more than fifty years anchoring in Yeonhwa-ri, she learned the seasons and conditions of abalone, conch, and sea cucumber through her fingertips. Today she stands in front of the shop tanks each day and reads the grain of the day’s ingredients one by one. Ingredients she has touched end up on the best spot of a shared table.

Running the shop is exactly the same principle she learned diving: "Only what is good today · finished within the day · for the guest." Even if you pick a good one from the water, without moving it quickly its good condition does not last. That is why "no leftover stock; sold within the day" became the base of our shop.

In 2016, UNESCO added Jeju Haenyeo Culture to the Representative List of the Intangible Cultural Heritage of Humanity. Busan and Gijang diving has a slightly different grain from Jeju, but it is a women’s community culture that runs from the same root. Come to the shop and meet a facet of that culture through a shared table. Ask the haenyeo grandmother; she’ll happily share her stories.

All three assume a car. Transit visitors from Busan Station or Haeundae: approach on the Donghae Line Metro or bus 181, then shift the shop time (morning for A, evening for B, afternoon for C) and it works comfortably.

8 mistakes first-time visitors make

Fifteen years running the shop, these are the mistakes we repeatedly see on first visits. Avoid these eight and you’ll enjoy your time much more comfortably.

KTX to Busan Station takes ~2h30m, plus 40 min on the Donghae Line brings you to Gijang matjip. Leave in the morning, enjoy lunch, return in the evening!

Q. Is Gijang matjip good with kids?+

Absolutely. Avoiding spicy dishes, kids eat well. Porridge and kalguksu are gentle for children’s palates, and many shops keep kids’ chairs.

Q. What is the price range for live sashimi at Gijang matjip?+

For a visit of 2 at Gijang matjip, Bada-Hana (₩55,000) fits nicely. Flounder sashimi and a variety of items come on one table. Carefully selected ingredients at a reasonable price.

Q. Worth visiting on rainy days?+

On the contrary, rainy days have shorter waits and a relaxed pace. Harbour scenery has its charm, and a hot bowl of porridge tastes even better in the rain.

Most spots are seafood-heavy. Gentle options like kalguksu and porridge exist, so if someone in the group can’t have seafood, let us know at the shop when visiting.

Most shops take cards. That said, small buys at traditional-market stalls can be cash-only, so having a bit of cash on hand helps.

We do not accept separate reservations: seating is by order of arrival. For groups of 8+, call ahead (0507-1482-2427) and we can advise on seating and wait time. The 2F window group seats are popular; expect a wait depending on the hour.

Q. Is Gijang matjip really convenient by transit?+

From central Busan, yes. From Busan Station and Haeundae it is under an hour, and the Donghae Line Metro / bus 181 run every 15–20 minutes for easy access. To reach inside the village, take village bus 9 (20–40 min headway) or a ~8-minute taxi.

Q. How can I secure ocean-view seats?+

The 2F window seats are assigned in order of arrival (no separate booking). Seats are limited, so weekend evenings and sunset hours generate waits and window seats may already be taken. For a stronger window chance, visit on quieter weekday afternoons or weekend mornings. Even non-window 2F seats keep the ocean view.

Q. Is there language support for international guests?+

On request we hand out a menu card with English, Chinese, and Japanese alongside the Korean original. Our haenyeo grandmother speaks mainly Korean, but with simple gestures and translation apps you can dine comfortably. Payments accept overseas cards (Visa · Master · JCB · UnionPay). Allergies; let us know at the shop with your nationality and preferred language for smoother service.

Q. Are kids’ chairs and baby food available?+

A few high-chairs are on hand (ask at visit and we’ll seat you. We don’t serve dedicated baby food, but the abalone porridge is gentle enough for children. For babies without teeth we can portion out plain porridge separately) just let us know. Many families visit, so the haenyeo grandmother naturally looks after them.
