The reason is simple: the instinct that says "keep breakfast light and warm when traveling." This village moves with the tides from dawn. After the haenyeo mothers return from diving, the first meal they eat is this bowl. Carefully selected abalone, cleaned and sautéed in sesame oil, then simmered with soaked rice in a cast-iron pot. A single serving is the original neighborhood breakfast, unchanged for 50 years.

There is scientific backing for why this dish makes an excellent breakfast. Abalone is rich in taurine (approximately 1,500 mg per 100g), which aids liver detoxification and fatigue recovery, while arginine improves blood circulation. Because it's a congee, it is gentle on the stomach, perfect for mornings after late dinners or travel fatigue. Traditional medicine research suggests porridge has a digestive absorption rate of over 95%, compared to about 85% for regular rice.
